Pulled pork is created when you cook pork low and slow for a long period of time. Third Wave Cafe, in this case, cooks it for at least 12 hours in our custom in-house smokers which also infuses it with a delicious smoky flavour. The process of cooking it low-and-slow rather than FAST AND HIGH (which is a traditional or Australian BBQ Style) transforms the pork into a soft meat that allows you to pull it apart with your fingers… hence the name “pulled pork.”

What we do is we not only cook it low-and-slow but it is also cooked in spices. We serve the pulled pork in a couple of delicious ways. At the time of writing this, we have a few favourite ways of serving up pulled pork.

Pulled Pork Sliders, which feature pulled pork with fresh tangy coleslaw, pickled cucumber and mustard. A seriously delicious way to have pulled pork in Melbourne.

We also serve up Pulled Pork sweet potato Loaded fries which are to DIE FOR! Chunky sweet potato fries loaded with sour cream, pulled pork, cheese and Apple Bourbon BBQ sauce.

First is quite obviously the pulled pork burger which features juicy 12 hour slow cooked pork with spices, tangy coleslaw, pickles and mustard. But really tasty In a brioche bun.

Also, 3 Little Piggies Burger, which has a half bacon half beef porterhouse patty, mustard, Pickles, our house made spicy BBQ sauce, cream cheese, candy bacon, tomatoes and wait for it – Smokey Pulled Pork  – hence the name 3 Little Piggies. All this in a tasty brioche bun. You have never tried anything like this in Melbourne like this pulled pork.

The final is the Oh Mamma Burger!! Mustard, caramelised onions are topped with 12 hour slow smoked boneless beef short-ribs. This is followed by our incredible pulled pork. Then each meat is covered with melted aged jack cheddar and swiss cheese, topped with grilled streaky bacon and spicy BBQ sauce and all this in a huge brioche bun.
