This BBQ Platter contains deliciously slow smoked meats– 2 x Beef Ribs, 2 x Cheesy Kransky Sausage, Half Chicken, 12 Wings, 300g Brisket, 300g Lamb Shoulder, 4 pieces of Cornbread, Smoked Mac and Cheese, Slaw, Beet Battered Fries, Onion Rings, Candy Bacon, and Pickles. Probably enough for 6 with leftovers.
Our 2 smokers are working nonstop. These days we smoke up to 1000kg of meat per week. Hundreds of kilograms of meat is received and processed daily. Our chefs are constantly trimming, deboning and removing membranes. The kitchen is always full of smoke and spicy rub aromas. This makes sure when you order our BBQ platters they are fresh of the smoker.
The slow smoked meats that Third Wave regularly serve include Texas Style Beef Brisket, Pork Ribs, Beef Ribs, Pork Belly, Lamb Shoulder, Salmon, Chicken, Chicken Wings, Chicken Ribs, Sausages and more. The meats are smoked with Hickory, Maple and Apple woods. Hickory is used for all the dark meats like Beef Brisket, Beef Ribs and Lamb Shoulder. Maple is a little milder, so we use it for the lighter meats like Pork and Chicken. Finally, Applewood is great for smoking Salmon.
The Candy Bacon in this platter, with it’s sweet maple glaze and chilli flakes is the perfect blend between sugar, salt and fat while the beef ribs in this platter fall of the bone.
